I have done some After Effects projects that had pages that flip, but I'm wondering
what technique was used in Jackies latest PhotoKnockout Tutorial showing page flips.

Can we be advised? Or maybe there could be a quick tutorial on it?

I can't say for sure, but it looks like the "fold" transition in Camtasia Studio (screen recording software).
